The Muscadet de S?vre et Maine Orthogneiss from Domaine de l\'Ecu is a French wine from the western Loire Valley, produced exclusively from the Melon de Bourgogne grape. It is a very famous white wine because it represents the absolute best pairing with a plate of oysters. Its citrusy and fruity profile, simple, fresh, and slightly savory, perfectly matches the marine taste and the meaty and rich texture of the prized mollusk. The vinification in concrete helps to maintain its characteristic varietal profile, in its full and harmonious expressive fragrance.
\nThe white Muscadet de S?vre et Maine Orthogneiss is the result of a long research effort aimed at creating labels capable of authentically expressing the great wines of the Loire region. Guy Bossard began to take an interest in vineyard management protocols compatible with the environment, inspired by organic farming, since the early 1970s, consciously embracing biodynamics twenty years later. A journey which has led him to adopt a production philosophy based on the progressive and complete elimination of chemicals. Even in the cellar, he follows the path of minimal intervention, using spontaneous fermentations, indigenous yeasts, very low use of sulfur dioxide, and aging in inert materials, such as cement or terracotta, to preserve the varietal purity of the grapes. His wines still retain an artisanal character, and today Domaine de lEcu is one of the most interesting quality realities in the wine region of Nantes.
\nThe Muscadet \"Orthogneiss\" produced by Domaine de l\'Ecu comes from vines that are about 50 years old and are cultivated in soils characterized by the presence of ancient magmatic rocks of orthogneiss. After fermentation with indigenous yeasts in cement tanks, the wine rests for several months in cement before being bottled without filtration. In the glass, it has a bright golden yellow color. On the nose, it recalls aromas of white flowers, citrus, tropical fruit, toasted almonds, spices, iodized hints and marine. The taste is harmonious, with ripe and delicate fruit and a finish of balanced freshness, closing with savory and mineral notes.
